History
Existe la teoría de que el nombre de Pitarque deriva del árabe Abu-Tariq, padre de la acequia, y que se debe al canal construido durante la época musulmana.
Hay restos de un asentamiento ibero en el lugar llamado Pitarquejo, dentro del término municipal, que desapareció en fecha indeterminada. Existe constancia de la existencia de Pitarque desde 1214. La iglesia parroquial está construida sobre el alcázar árabe.
A mediados del siglo XIX la villa tenía contabilizada una población de 912 habitantes. Aparece descrita en el decimotercer volumen del Diccionario geográfico-estadístico-histórico de España y sus posesiones de Ultramar de Pascual Madoz de la siguiente manera:

En el primer fin de semana de octubre se celebran las fiestas patronales en honor a la Virgen del Rosario, las cuales terminan con una romería a la ermita de la Virgen de la Peña. También hay otra romería el 29 de junio, fiesta de San Pedro.
