Castejón is a municipality in the province of Cuenca, Castile-La Mancha, Spain. The municipality has 43.62 km2 and a population of 158 inhabitants, according to the 2015 census (INE).

History
En relación con un castillo en Castejón, Gamāl Abd al-Karīm recopila escritos sobre el "Castillo de Huele" como situado en Castejón. En la Declaración genérica del Decreto de 22 de abril de 1949. Ley 16/1985 sobre el Patrimonio Histórico Español, se relaciona el Castillo en el Municipio de Castejón con ubicación desconocida y tipo sin clasificar, no se especifica cronología. José Luis Rodríguez Zapata en su libro Castillos de Cuenca indica que parece que bajo el nombre de Castejón de Huete o de la Alcarria tuvo castillo o torreón perteneciente a la cora de Santaveria. Parece que es este castillo el referenciado en El Cantar de Mío Cid, aunque algunos quieren que sea el castillo de Castejón de Henares cerca de Jadraque en Guadalajara.
En Castejón habría tenido lugar el primer registro bautismal en el territorio de la actual comunidad autónoma de Castilla-La Mancha:
La heredad de Villaverde, en Castejón, figura como una de las propiedades del monasterio de Monsalud en una bula de Inocencio IV fechada en 1250. La localidad adquirió el título de villa en 1553.
A mediados del siglo XIX, la villa tenía contabilizada una población de 795 habitantes. Aparece descrita en el sexto volumen del Diccionario geográfico-estadístico-histórico de España y sus posesiones de Ultramar de Pascual Madoz de la siguiente manera:

Los hartatunos —prácticamente desconocido en la actualidad— son un plato autóctono de Castejón hecho a base de harina blanca, patatas cocidas y guindillas picantes al gusto de los comensales. Si había bonanza económica se le añadían huevos (estrellándolos) y productos de matanza (especialmente hígado) o conejo si se terciaba en el campo.[cita requerida]
